"Fermentates" are  clean-label food ingredient made from bacterial fermentation. They can help enhance flavor, maintain product quality, and aid in the reduction of spoilage organisms when used in conjunction with good manufacturing practices, thus improving product quality over shelf-life. Fermentates can often use to maintain quality when synthetic preservatives have been removed and give food manufacturers the ability to meet consumer demands for clean-labeled (or clear label) foods, while still ensuring consistent food quality from production to consumption.

Fermentates provide benefits in a wide variety of applications, like dips, salad dressings, ready-to-eat products, cured meats, soups and dairy products.
